At LeVeL33, sustainability isn’t just a buzzword—it’s part of our DNA. Nestled 149 metres above the city, we’re known for our breathtaking views and freshly brewed craft beer, but behind the scenes, we’re also pioneering sustainable dining in ways that make a real impact.
Our journey towards sustainability is one of constant innovation, and we’re excited to take you behind the scenes of how we’re redefining what it means to dine responsibly—without compromising on flavour, quality, or experience.
Measuring and Reducing Our Footprint:
We meticulously track our carbon footprint, covering everything from energy and water consumption to waste and transportation. Partnering with Unravel Carbon, we identify areas for improvement and work towards decarbonisation. This collaboration allows us to provide our corporate clients with emissions reports, positioning LeVeL33 as a leader in sustainable business practices and a preferred destination for forward-thinking organisations. We’re also working towards recertification, demonstrating our commitment to sustainability beyond our restaurant operations.

Brewing Sustainably:
Our microbrewery, the world’s highest microbrewery in a building, is at the heart of our sustainability efforts. We brew our beers on-site using natural, certified organic ingredients, served directly from the tank. This eliminates the need for packaging like cans and bottles, significantly reducing waste and transportation emissions. To date, we’ve saved approximately 3 million bottles and cans! We also recover thermal energy from the brewing process and reuse it, minimising our energy consumption.

ContemBrewery Cuisine: Upcycling and Local Sourcing:
Our unique “ContemBrewery” cuisine creatively utilises beer by-products and prioritises sustainable sourcing. Spent grain, a by-product of brewing, is incorporated into our fresh pasta, housemade breads, and even desserts, minimising food waste and adding unique flavours. We use all parts of our ingredients – fish frames and shells are used for stocks, and beef fat trimmings are rendered down for cooking, reducing oil usage and enhancing flavour.
We exclusively source sustainable seafood, respecting animal welfare. Our salmon roe is sustainably milked from live fish, and we exclusively use pasture-fed and pasture-raised meats. We’re proud to partner with Westholme Beef, suppliers of exceptional Wagyu beef, showcased in our signature dry-aged rump cap. Our leafy greens, edible flowers, and herbs are sourced locally, and we’re committed to creating delicious and flavourful plant-based dishes using sustainably sourced organic mushrooms.

Technological Innovations and Waste Reduction:
We’ve embraced technology to further our sustainability goals. TablePointer’s AI-powered technology has significantly reduced our kitchen’s electricity consumption and CO2 emissions. We’re also working towards becoming a refined sugar-free kitchen.
At the bar, we partner with innovative companies, using ecoSPIRITS and sustainable bulk spirit concepts to reduce packaging waste. Our partnership with A1 Environment gives our coffee grounds a second life, turning them into upcycled furniture. We’ve drastically reduced the use of single-use water bottles by purifying and bottling our table water in-house, served in reusable glass carafes. Nearly 90% of the water we serve is now in reusable bottles.

Sustainable Details:
Every detail matters. Our menus are printed on 100% recycled paper, our napkins are compostable, and our custom-made napkin holders use reclaimed pallet wood. We use eco-friendly straws and stirrers made from 100% natural, biodegradable ingredients. Our collaboration with Indosole transforms discarded tyres into rubber used for items like our new LeVeL33 coasters.

In line with our sustainability commitment, we’re also excited to introduce our newest addition – tables made from 100% sustainable Singapore city wood, crafted from Singapore African Mahogany by Arthur Zaaro. Each table is one-of-a-kind, sourced from different parts of Singapore’s urban landscape, further reinforcing our dedication to supporting sustainable design and local craftsmanship.
